The answer to the latter half is in a big part this:How do you have the time to both watch all that anime and go through MAL finding all those series to watch!?
Through not even that much specific scrolling, more like looking at my panel "Oh x has has an update on that title, there is an add button, so I don't have it on my list, let's add it!"Wow that's a lot of anime, makes my total look minute. I have so much to watch and so much yet to discover. Scrolling through your completed section has led me to start adding more to my plan to watch list.
And also scrolling through seasonal things. And there are the most randomst reasons, like OST composer, director, etc. I am not particular picky at putting things on my ptw. Basically anything I spot that's not ecchi, ends up there to the point the list has gone rather useless. I am trying to put in comments as to why again I put it in, but I always forget about discipline. (It's working better for my movie PTW list. moviepilot.de only has two fields when I add a title, one being a hard to oversee comment box.)
As for the former: This time figure displays Running Time consumed. It does not reflect Time spent watching. The latter I have really no idea how much it is. I frequently rewatch certain great scenes in a loop, because they are just great or watch so much AMV footage, there are also look OP/ED watchings, while skipping OP/ED is also frequently happening, should I not like it. I also accelerate playback. 1.23x is a cozy space where no additional concentration is needed. The utmost extreme I ever managed for a regular show that's not just 20 minutes of static was 3x, but that was a one of a time so far. Generally, if I do not feel any itching on to want to accelerate, the thing is a really well put together show, I would want to buy on BD, for which does exist a single player than can accelerate with audio preserved.
In other words it's debatable whether I cheat or not, but it's not really a contest anyway.
But back to you question nonetheless:
The answer would be "I don't. At least, not anymore." Just look at my MAL history, there was no much anime watching at all recently. I accumulated a lot in the past, because I really was never picky. A lot of tr... subpar stuff ended up there, because I really just watched anything I could get hands on excusing myself with "I am training Japanese listening comprehension with this." Acceleration tricks started around when I entered university and had less time, because, ultimately, I just want to still try out everything out there. But it's getting increasingly unfeasible. Still apparently I managed 32.2 days of running time in 2017.
So, well. Learn to be properly selective, it saves a ton of time, I suppose?
