I'm currently loving Kibouhou from Spirals and ALONES from Bleach, and Howling from DtB, though ALONES sounds like someone singing underwater. ;|

Cruel Angel's Thesis - Neon Genesis Evangelion
Red Fraction - Black Lagoon
Hakuta Katana(sp?) - Naruto
Asterix - Bleach
Sonic Drive - SonicX
We Are! - One Piece
 
Other than the OP and ED that have been mentioned a couple dozen times aready some good in episode theme music... Area 88, and some good fight musics, Gundam Seed had that nice piano piece and Rahxephon had a number of good themes for all ocassions
 
Da Capo - The opening has just grown and grown on me, simple yet nice.

Shuffle! - Pretty energetic opening and i like it, has a good j-rock feel to it. The backing track isnt that shabby either. some of the background music reminds me of Tenchi.
 
Naruto Shippuuden - hero's come back
Naruto 1st ending - Wind
Naruto 4th (?) - GO!!!
Bleach 3rd ending - Houkiboshi
Bleach Opening (forgot which) - Tonight, Tonight, Tonight.
Inuyasha 5th ending (I think, even though I don't watch it) - Every Heart
FMA 2nd opening - Ready Steady GO!
 
Naruto Shippuuden - hero's come back Loving this track, have it as my ring tone at the moment and keep driving people at work nuts with it

Woah, i thought i was the only one with it as a RRRingyTone, ill be changing soon though, bored of it after a few weeks.
