As I was writing this post, I thought it best I take a look at the English Version of the Production I.G. website in full. So, in doing that I found that actually there's an extensive lot of information on everything Production I.G. From their TV shows, to movies, to commercials.
This post is more an information post about the website now that I've looked on it. It was originally going to be listing recent updates to the interviews, but instead if there's a show you're interested in, just search around the 'Works' page and click on 'Special Features' to see a list of them.
The Chevalier D'Eon page has a mass of interviews with a lot of the staff that created it (around 20 I would say).
A variety of Japanese commercials also have interviews . The recent shampoo advert titles 'Hairy Tales' has a few.
The Blood+ page also has some recently updated interviews as well.
Along with Maaya Sakamoto's new music video 'Universe' being produced by Production I.G. The page for this contains a two part (and to be continued) interview with the wonderful woman herself. Video is Here
I'm sure there are many many more interesting little things on each invididual page for each Production I.G. work, so there's no point listing them all here : D.
