A few weeks ago i got the Metal tin boxset edition of Neon Genesis Evangelion. I started watching it 2 days ago. Its pretty good so far. The action is actually pretty good. I was looking at the casses of the volumes one day and i noticed that some episodes have the option of watching them in directors cut version or watching the On-air version. I just wanted to know which one i should watch: Directors cut or On-air.

Director's cut is essential. Especially for ep22.
 
It depends on which ending you're going to watch.


The movie - End of Evangelion - replaces the last 2 episodes of the series and the design of certain things were redone, the directors cut also uses these redesigns.

Also the 'next episode' bit lists the first part of the EoE movie as the next episode.

So...

Watch the NON- directors cut version for the original series ending.

Watch the directors cut version for the 'End of Evangelion' movie ending.
 
I thought this was going to be about your favourite Evangelion episode and I was going to come in here and praise EVA and say how amazing episode 19 is, but now I know it's not, well... damn. But at least your question is answered.
