Mine has to be:

Dragonball Z: Gohan finally going SSJ2

Monster: Most of it, but mostly when we find out the true plans of Johan (killing the town with just psychology)

Ghost in the Shell: Motoko's trademark jumping out the window.

Ichigo going Bankai for the first time in Bleach.

Rock Lee removing his weights during the Gaara fight, oh and Rock Lee drunk fighting in Naruto.

Revi in Black Lagoon, she rocks

The ending of Eureka 7 and Green Green, real tear jerking moments.

Vash the Stampedes opening gun fight in Trigun, so goofy yet so cool oh and his gunfight with Wolfwood, where you get to see Wolfwoods Cross open up and reveal all the weapons hidden in it.
 
Tenchi Muyo! - When Tenchi slaps Ryoko in Daughter of Darkness, i was speechless. Also in the very last episode of Universe When Ryoko comes back and tells Tenchi "If you wait long enough the carnival always comes back" then everyone starts appearing. I hated and loved it all at once, mainly because i wanted more Tenchi.

Cowboy Bebop - When Spike and Vicous are fighting in the cathedral, What a fantastic scene that was.

Elfen Lied - When Lucy ripped off Nana's arms and legs. Also when she and Kouta meet up and he realises that she killed his family.

Got a few more but it's way too early in the morning.

The ending of gungrave was one of the sadest Ive seen

I loved the ending of samurai champloo and the begining was great to.

I pretty much liked most of the fight scenes on Bleach :D
 
One Piece: When the Straw Hats are all at Enies Lobby saying they'll save Robin no matter what, then Robin has her memories of Nanohana, then she cries out she wants to live.

Bokurano: When Waku is pushed off of Zearth and everyone is all "o_o"

Bleach: The only OH SHI-- part is Aizen being the villian. lulz.

Neon Genesis Evangelion: Asuka fighting against the mass-producation EVAs. <3... then losing.

When Harry killed Brandon in the elevator. - Gungrave

L tells Light that he is L. - Death Note

L watches Misa's videotape that mentions death gods and he freaks out. - Death Note

The entrie first fight with the Mad Perroit which ends with Spike falling into the water, very stylish and intense. - Cowboy Bebop

Maes Hughes' death. - Fullmetal Alchemist

Togusa is shot while trying to escpae from the Sunflower Society building and drops on the pavement with no one taking notice. - Stand Alone Complex

Motoko folds a paper crane from the wrapper of a sugar cube packet and leaves it on the table. - Stand Alone Complex

Rakka cutting off her black feathers. - Haibane Renmei

The well sequence. - Haibane Renmei

Lain walks up to the guy with the gun in the club and he kills himself with no reaction from Lain. - Serial Experiments Lain

The nail pressing down on Ichise's eye in the first episode. - Texhnolyze

Chobits - When Miss Hibia(spelling) Shuts down Chi and tells her to terminate all her data. That was a really sad moment.

Fave ep is in Season 2 when her and the nun get into a gunfight at the church with a bunch of clueless miami thugs - laughed so hard when one of the thugs yells at his men not to fire as you'll only piss the girls off
 
Evangelion Episode 2 one eva going ape $#!+ on the angel's arse. Every time i watch a new mecha series i hope for something like that.
El Hazard after anouncement demanding surrender 'P.S. Your ass is finally mine Mokoto Mitsuhara!!!' Just what you should tack on to the end of every meglomanical speach.
Gundam Seed when Cagalli overhears the argument between Kira, Flay and Sai and finds out Kira's been getting giggy with Flay. The expression on her face was priceless.
Appleseed (2005) when Bassment Jaxx kicks in.
RahXephon Movie = Ayato and Haruka laying together in post coital bliss.

Ah yes.

Appleseed: All the fight scenes, the 3D/Cel shading work throughout is just ... amazing. Im waiting patiently for the second.
